zucchini bread

While we were at Paxton's Grandpa's house the other weekend, they sent us home with some fresh zucchini, squash, green beans, and new potatoes from his garden, and a lot of it too. It's amazing how you can tell the difference between fresh garden and store bought. Anyway, I had to do something with all this zucchini so of course had to make zucchini bread. I've already made one batch, and am now enjoying my second batch. Each making 2 loaves.
Here's the recipe.

Zucchini Bread
3 eggs
1 c oil - I put in ground flax seed to sub for some of the oil.
2 c sugar
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
2 tsp cinnamon
2 c grated zucchini
3 c flour

Combine all and pour into 2 bread pans. Bake at 350 degrees 40-45 minutes.

It's yummy. I had to go get myself another slice just talking about it.

But this picture will make ya lose your appetite... and no it's not chocolate.

My appetite is back after seeing these pictures though. Ty is so scrumptious. I just love him.
He has discovered how to open and close the dishwasher door, climb up onto the door, pull out the rack and play with the silverware. He always goes for his spoons. He throws them onto the floor and reaches to pick them up but can't ever reach them. So he goes for something else inside.


Just as Ty likes to pull out the silverware from the dishwasher, so he does with the dvd's... until they're all off the shelf. Then he pushes them across the floor.


I had a little fun taking pictures today of Ty and I.
He knows how to give kisses and understands when I ask for one. Of course he does the wide open mouth kiss, but I still gladly take it. Yum yum.

country

We went to Crockett, TX over the weekend to visit Paxton's family, Gramps & Rita. We had a lot of fun out in the country relaxing and playing with all the animals. Ty especially loved their dogs Coconut and Happy. He laughed anytime they growled and would follow them everywhere.



We got to see where Gramps grew up and where his old house used to be. There are just trees everywhere now. I thought they lived far out in the country now, but this was really far out.
Here's the bridge he used to lived by called Hobson's Crossing.
Ty was the entertainer of the weekend being his crazy, loud, fearless person he is. He's a lot more fun since the last time we were there to visit. They loved seeing his silly personality.

Yaya got him this car, so we took it with us so he could drive it while we're there. He took a 20 minute drive every morning to get some fresh air. If it were his choice, he would never get out of his car. He loves it!
We had a great time, and it was hard to leave. Thanks Gramps & Rita!

Ty's 9 month stats:
Height: 28 1/2 inches - 85%
Weight: 18lbs 5.5 oz - 15%
Head: 18 inches - 70%

He's doing great, and starting to eat more normal table foods. Not liking cheeses though. I tried feeding him cottage cheese the other day and he grimaced, spit it out, and gagged. So sorry bud. But he loves his fruits, veggies, juices, & crackers.

I'm pregnant again. I am feeling alright. Just very tired and growing bigger. That never feels good. We found out last week that we are having a girl. We are so excited, but it's still sinking in that we are going to go through this whole newborn thing again very shortly. Not looking forward to that. Our search for baby girl names is on. We've got a few in mind that neither of us can agree upon. Any suggestions on how to convince Paxton of my names?

his favorite place

He loves to play on the fireplace, pushing toys and DVDs across it. He may like it too because it's a cold surface. He is a fireball... so it cools him down a bit. Especially during these hot days we're having.

He gets so mad when the truck tips over and he can't push it anymore. Usually it's when he is really tired so he gives up on trying to put it upright and keep pushing. I'd probably do the same thing.
He has his Dr. appointment tomorrow, so we'll get to see how much he's grown!

That's how many months my baby is... 9 months!

He is getting more and more fun each day. He seems to learn new things every day and understands a lot.
He likes to dance when there is catchy music on.
He loves to push cars and trucks on the floor, or any toy that will slide.
He can say mama, dada, baba, yaya, and other jibber jabber.
He hates to ride in the car seat or be contained for too long.
He bounces in his crib waiting for me to come get him after naps, and is always happy to see me.
He loves to be tickled and thrown on the bed, and play rough.
He likes to dip his face in the water during bath time. He thinks it's so hilarious.
He grunts and growls at me, his toys, and his food all the time.
He laughs at himself in the mirror.
He follows Mom everywhere she goes in the house.
He loves his food, and if it gets taken away because it's too small or messy, he gets mad, swings his arms, and shakes his head back and forth until we do something about it.
He is a very curious boy who tries to get into everything he can. The house is a mess by the end of the day because he chucks his toys when he's not interested in them anymore.
He screams really high and loud when he gets excited.
He is the sweetest baby in the world, and we have had SO much fun with him. He makes me laugh every day.

rockin out



Ty is teething again. I'm not sure which tooth/teeth are coming in, but he's been sucking on his gums and chewing everything. He had a stuffy/runny nose the past week and is now over it, so I'm hoping this tooth will come in soon.

We've been enjoying the warm weather by going to Yaya's pool and taking lots of walks around the neighborhood. I cannot wait til our pool opens in 3 weeks. I think he'll love it.

Ty never is interested in watching TV when we have it on, but when I pop in Baby Einstein, he is glued. I don't know what it is about that show that attracts them, but it works. And I can get a little time to myself where he's not climbing all over me.
He sure is a climber. He climbs on me, and up to the couch that I'm leaning against. Then he climbs up the pillows. He climbs up on the cabinet doors, dishwasher door, oven door, beds, dressers, couches, tv stand, bathtub, everywhere. He is starting to move along the couch when he's standing against it. Silly kid.

A few days ago, a couple friends and I went to a consignment sale that had tons of baby toys, clothes, books, and gear. I could have spent hours there looking at all the clothes and books and toys, but Ty was super tired. I still got lots of good things. Two Little People sets, a big bag of blocks, 3 books, and a pair of shorts all for $30! I'll definitely go next year! Thanks Lisa!

Paxton and Ty got a few pictures taken last night. Paxton framed a picture for me for Mother's Day... an early present. It's not either one of these, but it's just as cute. I love my boys. Thanks for the pictures Pax.

Ty's hair is getting long enough where he needs a haircut... but I don't want to cut any hair off that head! It's just too cute. But I know he'd look super cute with a little trim.. probably look older. I think a long shag would be cute too. I just can't do it.

Ty is a busy boy. He has learned about a month ago to pull himself up onto everything, couches, chairs, crib, myself, tables, anything. He has taken a few more falls since then too. Just getting in more trouble every day. And recently he has been dancing whenever music comes on. He bounces up and down, it's so cute.

My flower beds finally have flowers in them! Got that done today.

Ty wasn't afraid to get his hands dirty either... nor his face! It was dirtier than this, but he had wiped some on my shirt before i could snap a picture.

snot, coughs & bruises


Ty & I have been sick since Monday with a deep cough, sinus congestion, & sore throat, and constant sneezing by me! It's effected his naps and play time, which made for an absolutely fantastic day on Monday. It was one of thee. worst. days. of. Ty's. life. (and mine.) But now Ty seems to be recovering more quickly than myself. He has more of a stuffy nose but his cough and sore throat are mostly gone. It's sad (and kind of funny) when he eats a bottle because he has to stop every 5 -10 seconds or so to get a breath in. A deep breath. He eats as long as he possibly can before taking his breaths. Poor fella.
Today has been a bit rough. There's been 3 falls on the head, 2 have left marks. He's only had 1 nap today, when he normally has 3. (although he has been going down to 2 the past several days on & off.) He cried for about 45 minutes straight during his 2nd nap which was supposed to happen and didn't. I'm sure he'll take another one today... he better.
As for myself, I cannot taste anything I eat. So... why am I eating? Who knows. I get hungry. And weak. And cranky. My cough is pretty deep and manly. Hurts my chest and my head every time. And I've gone through a whole toilet paper roll to blow my nose. It seems like every 5 minutes my nose is running again. But, I don't think it can get much worse, so that's good!

Well enough complaining. Didn't mean to do that. I tried to download a couple videos of Ty crawling and being silly, but I waited over an hour for it to download and it still wasn't done... so no more waiting. I'll try another day. A picture of Ty crawling will have to do for now.

My latest accomplishment has been installing trim around our flower beds. It was pretty simple, but lots of fun to get out and work on a nice Saturday afternoon. Plus it makes the yard look much nicer!! Now we need to get mowing. And I also am wanting to plant some more bushes and flowers! Hopefully it'll happen this Saturday. Spring is here! Which means summer is almost here, which means pool time is almost here!!
